You can find many cheap and interesting SMD or Through-Hole soldering practice PCBs on-line. I thought I would have a go at making my own in KiCAD, with some Steamhead branding. It's a simple two transistor mono-stable blinky LED device and combines a few through-hole and simple SMD components. JLCPCB produced the PCB's and shipped them to me at Steamhead in Shenzhen within 4 days.

You can vary the blinking rate by swapping the set of jumpers in the middle of the board. It doesn't take long to solder and people could learn a bit about using a multimeter to identify a LED anode/cathode.
